Cola Cake

Cake

  • 2 cups (275 g / 9.7 oz) flour
  • 2 cups (450 g / 16 oz) white granulated sugar
  • 1 cup (250 ml / 8.5 oz) cola
  • 2 sticks (250 g / 8.8 oz / 1 cup) margarine
  • 3 tablespoons cocoa
  • 2 eggs
  • ½ cup (125 ml / 4.2 oz) buttermilk
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ cup (125 g / 4.4 oz) miniature marshmallows

Frosting

  • 6 tablespoons cola
  • 2 tablespoons cocoa
  • 1 stick (125 g / 4.4 oz) margarine
  • 1 teaspoon vanilla
  • 4 cups (500 g / 1.1 lb) powdered sugar
  • 1 cup (80 g / 2.8 oz) chopped nuts (optional)

Method

  1. Combine flour and sugar in a bowl.
  2. Mix cola, margarine, and cocoa in a saucepan, and bring to a boil.
  3. Pour over flour/sugar mixture and mix well.
  4. Beat the eggs and mix them in. Add milk, soda, vanilla and marshmallows to make thin batter. Marshmallows will float to the surface.
  5. Bake in a 9x13-inch (23x33 cm) pan at 350 F for 35 minutes. Make frosting before it cools.
  6. Mix cola, cocoa, and margarine in a pan and bring to a boil.
  7. Add vanilla, sugar, and nuts. Mix until smooth.
  8. Spread the warm frosting on the cake.
