Confederate Cush

Confederate cush is a dish that became popular among the armies of the South during the American Civil War, since it used ingredients that many Southerners had on hand.

Ingredients

  • Fat bacon, chopped
  • Cubed cooked beef
  • Cornmeal mush
  • 1 qt water
  • 1 clove garlic (optional)

Method

  1. Put bacon into a hot iron skillet, and fry the grease out of it.
  2. Add the beef, then slowly add 4 cups of water. Bring to a boil.
  3. Add cornmeal mush and stir until dry.
  4. Remove skillet from fire, and let cool.
  5. Serve warm, like hash.

Notes

  • Can be made with cold cornbread or soured corn pone.
  • Flour can be substituted for cornmeal.
  • Salt pork can be substituted for bacon.
  • If more water is added, it can serve as a stew.
  • Crumbled hardtack can serve in the place of the cornmeal mush.
  • Can be saved for later, like hardtack.
