Ingredients

  • 4 tbsp chopped onion
  • Fatty pork
  • 1 quart mashed potatoes
  • 1 ½ pounds sea biscuit, broken
  • 1 tsp thyme
  • 1 tsp summer savory
  • ½ bottle mushroom catsup
  • 1 bottle port or claret
  • ¼ nutmeg pod, grated
  • A few cloves
  • Mace
  • Allspice
  • 6 pounds sea bass or cod, cut into slices
  • 25 oysters
  • Black pepper
  • A few slices lemon

Method

  1. Fry the onion with the fatty pork. Transfer to a large pot.
  2. Add all remaining ingredients to pot.
  3. Add enough water to cover everything by 1 inch.
  4. Bring to a boil. Simmer for 1 hour, stirring gently every so often.
  5. Serve.
