Ingredients

  • 1 cup nuts (e.g., pecans), ground
  • 1 cup seeded dates, ground
  • ½ cup white granulated sugar
  • 3 egg whites
  • ½ teaspoon salt
  • 1 tablespoon cream
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1½ cup confectioner's sugar
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract

Method

  1. Grind the nuts and dates; sift in the granular sugar.
  2. In another bowl, whip egg whites until stiff.
  3. Gradually add the sugar mixture, whipping constantly. Fold in the cream.
  4. Sift the flour, then re-sift the flour with the baking powder. Fold into the egg mixture.
  5. Grease and flour a baking sheet.
  6. Pat dough ½-inch thick on the baking sheet, and bake for 10 minutes at 350°F (175°C).
  7. Mix confectioner's sugar with lemon juice and vanilla in a blender.
  8. When the cookies are still hot, spread the glaze over them.
