Ginger Biscuits

Ingredients

  • 3½ cups (475 g/1.05 lb) all-purpose flour
  • 2 sticks (250 g) unsalted butter
  • 1 cup (225 g) caster sugar
  • 2 tablespoons ground ginger
  • 2 eggs
  • Milk as needed

Method

  1. Preheat the oven to 160 C. Grease a baking sheet.
  2. Rub the butter and ginger into the flour in a bowl until the mixture resembles breadcrumbs.
  3. Add the eggs and mix to a soft dough, adding a little milk if necessary.
  4. Roll out the dough to 5 mm and cut out biscuits with a plain round cutter.
  5. Place them on the prepared baking sheet and bake for 5 minutes until golden.
  6. Take the biscuits out of the oven and leave them to cool.
