Gurudi (Nigerian Coconut Biscuit)

Gurudi, also called gurundi, is a Nigerian coconut biscuit made from finely-grated coconut, cassava starch, and sugar.

Ingredients

  • 1 fresh coconut
  • 65 g white sugar
  • 80 g cassava starch
  • 1 pinch nutmeg

Method

  1. Gently crack open the coconut, and separate the meat from the shell. Use a grater or food processor to shred the coconut.
  2. Combine the grated coconut, sugar, cassava starch, and nutmeg. Stir in water until it forms a dough ball.
  3. Roll out the dough until thin. Cut out square biscuits, and transfer them to a buttered baking tray.
  4. Bake the biscuits for about 20–25 minutes at 150°C (300°F) until golden brown and crisped.
  5. Remove the biscuits from the oven, and let cool.

Notes

  • In the absence of cassava starch, potato starch or corn starch can be used as a substitute.
  • If desired, you can also use pre-shredded coconut.
