Method

  1. Wash the rice thoroughly and set aside.
  2. Blend the tomatoes, peppers, and one onion until smooth.
  3. Heat the vegetable oil in a large pot.
  4. Chop the remaining onion and fry until softened.
  5. Add the tomato paste and cook for 2 minutes.
  6. Add the blended tomato mixture and cook until the sauce thickens.
  7. Season the sauce with seasoning cubes, curry powder, thyme, and salt.
  8. Pour in the chicken stock and bring to a boil.
  9. Add the rice and stir to combine.
  10. Cover the pot and cook over low heat until the rice is tender and the liquid has been absorbed.
  11. If necessary, add a small amount of water during cooking.
  12. Fluff the rice with a fork and serve hot.
