Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tomato, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon ground paprika
  • ½ teaspoon ground cayenne pepper (optional, for heat)
  • 1 bunch of fresh collard greens, washed and chopped
  • Salt, to taste
  • 2 cups vegetable broth (or water)

Method

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and the garlic becomes fragrant.
  3. Stir in the diced tomato, red bell pepper, and green bell pepper. Cook for a few minutes until the vegetables are softened.
  4. Add the chopped collard greens to the pot and mix well with the sautéed vegetables.
  5. Season the stew with ground paprika, ground cayenne pepper (if using), and salt to taste. Stir to coat the collard greens and vegetables with the spices.
  6. Pour in the vegetable broth (or water) to the pot, ensuring that the collard greens are well covered.
  7. Cover the pot and let the stew simmer on low heat for about 30–40 minutes, or until the collard greens are tender and flavorful.
  8. Taste and adjust the seasoning if needed, adding more salt or spices according to your preference.
  9. Serve as a main dish with rice or bread, and enjoy.

Notes

  • You can add other vegetables like carrots or sweet potatoes to the stew for extra flavor and nutrition.
  • For a richer taste, you can add some coconut milk to the stew during cooking.
  • Leftover stew can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
