  • 500g (1lb, 3.5 cups) all purpose flour
  • ½ cup evaporated milk
  • ⅓ cup sugar
  • 3 eggs
  • ½ tsp salt
  • Dry ground cayenne pepper (to your taste)
  • 1 litre (4.2 cups) water
  • Vegetable oil (for frying)

Method

  1. Break the eggs into a bowl, beat thoroughly, and mix with part of the water until well combined.
  2. Sift the flour into the mixture, stir until smooth, then add the evaporated milk, sugar, and salt.
  3. Gradually add the remaining water while mixing continuously to form a smooth, lump-free batter.
  4. Heat a lightly oiled frying pan and pour in a thin layer of batter, spreading it evenly across the pan.
  5. Cook on medium heat until the top sets, flip to fry the other side until golden brown, then repeat with the remaining batter.
