Rice and beans jollof is a typical Nigerian food made from rice and beans. It is served with beef, chicken or moin moin.

Ingredients

  • 1 cup dried beans
  • 2 fresh chiles
  • 5 medium tomatoes
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil or palm oil
  • 1 stock cube
  • 1 teaspoon salt or to taste
  • 2 cups parboiled rice

Method

  1. Rinse the beans, and boil in water until tender. Drain the cooked beans.
  2. Grind together the chiles, tomatoes, and onions to make a purée.
  3. Heat a thin layer of oil in a pan, and add the purée. Season with stock cube and salt, and simmer for 3 minutes.
  4. Stir in the parboiled rice and beans, and cook for 5 minutes.
  5. Serve with beef, chicken, or moin-moin.
