Ingredients

  • ¾ cup (180 g) shortening
  • 1 cup (240 g) brown sugar
  • ½ cup (120 g) white sugar
  • 1 egg
  • ¼ cup (60 ml) water
  • 1 teaspoon vanilla
  • 3 cups (700 g) rolled oats
  • 1 cup (240 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup raisins (optional)

Method

  1. Using a mixer, cream together the shortening, brown sugar, white sugar, egg, water and vanilla until light and fluffy (about 10 minutes on high).
  2. In a mixing bowl, mix together the oats, flour, baking soda, and salt.
  3. Add dry ingredients into wet, mix well using mixer.
  4. Stir in raisins if using.
  5. Scoop the portions out—this recipe makes 20 cookies, so make 20 portions.
  6. Bake at 350°F (180°C) for 8–10 minutes.

Notes

  • These taste best when still warm.
