Potato Meat Loaf

Ingredients

  • 4 medium potatoes, sliced
  • 1 onion, sliced
  • ½ pound ground beef
  • ½ pound bulk sausage
  • 1 egg, beaten
  • 6 soda crackers, crumbled
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ~1 can cheddar cheese soup

Method

  1. Preheat oven to 350°F.
  2. Place sliced potatoes in baking dish.
  3. Place sliced onion over potatoes in baking dish.
  4. Combine all ingredients except cheddar cheese soup, and mix well.
  5. Press into baking dish, forming an indentation in the middle.
  6. Pour cheddar cheese soup in indentation.
  7. Bake 1 hour at 350°F.
  8. Stand 5 minutes before serving.

Notes

  • Serving suggestion: Cut vertically with metal spatula, which will yield potato, onion, meat, and cheese in every serving.
