Scribbled Eggs

  • Oil
  • Tomatoes (optional), chopped
  • Scallion (optional), sliced
  • 2 eggs

Method

  1. Heat a small amount of oil in a skillet over medium heat.
  2. If using tomatoes, add them to the pan. Fry for a minute.
  3. If using scallion, add to tomatoes. Cook for another minute.
  4. Beat the eggs well, and pour into the pan.
  5. Start stirring the eggs—Kenyans call this scribbling. Cook like this until the egg is done.
