Sweet Potato Soup

This sweet potato soup is inspired by flavors of Southeast Africa and Asia, with the addition of ginger and lime.

Ingredients

  • 6 sweet potatoes, peeled and diced
  • 1 tablespoon fresh grated ginger
  • 2 cups chicken and vegetable stock
  • 1 cup water
  • 1 milk cream
  • 1 lime, juiced

Method

  1. Place the peeled potatoes, ginger, stock, and water in a large saucepan.
  2. Bring to a boil, then simmer until the potatoes are softened and tender (approximately 30 minutes).
  3. Transfer the contents of the pot to a blender along with the lime juice, and process until smooth. You may need to work in batches. Alternatively, you can use an immersion blender.
  4. Return the soup to the pot, stir in the milk, and allow to cook for few minutes until heated through.

Notes

  • You can adjust the consistency of the soup as desired by adding more or less water, milk, and stock. Less liquid will produce a thicker soup.
