Triple Chocolate Chip Cookies

Ingredients

  • 110 g (3.9 oz / 1 stick) unsalted butter, plus extra for greasing
  • 180 g (6.3 oz / 1 cup) soft light brown sugar
  • 1 large egg
  • 225 g (7.9 oz / 1¾ cups) plain flour
  • 30 g (1.1 oz / ¼ cup) cocoa powder
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt
  • 60 g (2.1 oz / ¾ cup) white chocolate chips
  • 60 g (2.1 oz / ¾ cup) milk chocolate chips

Method

  1. Preheat the oven to 190 C. Grease 3 baking trays.
  2. Mix the flour, cocoa, bicarbonate of soda and salt in a bowl.
  3. Beat the butter and sugar in a mixing bowl until soft and fluffy.
  4. Beat in the egg.
  5. Fold the dry ingredients into the wet ingredients.
  6. Fold the chocolate chips into the dough.
  7. Spoon heaped tablespoons of dough onto the baking trays, well spaced apart.
  8. Bake for 12–15 minutes. If you want a chewy texture, reduce the time to 10 minutes.
  9. Transfer the cookies to wire racks and leave them to cool.
  10. Enjoy!
