Zimtsterne are German cinnamon cookies often eaten for the advent season.

Ingredients

  • 4 egg whites
  • 300 g powdered sugar
  • 1 tsp cinnamon
  • 350 g ground almonds or hazelnuts
  • A little grated lemon zest

Method

  1. Whip the egg whites until creamy.
  2. Sift in powdered sugar, and mix into egg whites.
  3. Set aside almost a third of the resulting mass for casting.
  4. Stir in the remaining mass of cinnamon and almonds, or hazelnuts and lemon zest, and knead into a dough.
  5. Roll out the dough, cut out star shapes and place on the greased baking sheet.
  6. Mix the remaining stiff egg white with rum until a glaze mass forms.
  7. Brush the cinnamon stars with glaze.
  8. Bake in a preheated oven at 160°C for about 20 minutes.
